Breaded Lemon Pepper Tilapia

Very quick, cheap, and simple dinner idea.

What you will need

Frozen fillet of tilapia (thawed)
Bread crumbs
Parmesan cheese
Lemon pepper spice
McCormick Fiesta Citrus spice
1 Egg
2 lemons
Rosemary

Getting started

Preheat oven to 375.
Mix in bowel bread crumbs, lemon pepper spice, Parmesan cheese, and small amount of fiesta citrus.
Beat one egg and mix it with lemon juice.
Soak fillet in egg/lemon sauce for a little bit prior to placing in bread crumb mixture.
Completely bread the fillet and place on a sheet of aluminum foil.
Sprinkle on rosemary to season to taste.
Place a small slice of butter on top of the fillet.
Place two lemon slices on top to finish it up.
Fold over aluminum foil to make a single packet.
Place in oven and cook for 15 minutes.
Remove and serve with rice and steamed veggies.

Notes
Always check temperatures of fish and chicken prior to eating.
When you put the fillet in the oven you can start cooking the instant rice in the micro wave then follow it up with steamed veggies. This should be just the right amount of time to have all items done and ready to serve. We also had a bottle of Cupcake Moscato wine, complimented it very nicely.
