Crockpot Chili
The wife and I attempted for the first time crock pot chili. We really like this recipe after we modified the original to our tastes. We do believe this is a keeper.
Here we go...
Ingredients
2 pounds ground beef. (more or less for personal taste)
1 large bell pepper
1 white onion
3 jalapeno peppers
2 15oz pinto beans (drained and rinsed)
1.5 cans of diced tomatoes (about 15oz)
1 can beef broth
1 tablespoon cumin
1 teaspoon cayenne pepper
2 big table spoons minced garlic
6oz tomato paste
Prep work
Chop half of the onion and 2 jalapeno peppers and brown with ground beef.
Chop remaining onion, jalapeno, and bell pepper. Then place all ingredients in crock pot and stir them together. Cook on low 8-9 hours or high 4-5 hours. Garnish with cheese or ketchup or just about anything. Serves about 6-8.
Notes:
We cooked ours for about 9.5 hours and did not stir once after stirring together as we were not home at all that day.
