Fall off the bone delicous Crockpot Ribs

These ribs turned out amazing. They are definitely going on the make again list. Very simple to prep and make. Took more time to fix the sides than it did to prep or finalize the ribs.

So here we go...


Ingrediants

Ribs (I used pork loin country ribs)
1 big TBS paprika
1 big TBS light brown suga
1 big TSPS McCormick Perfect Pinch Fiesta Citrus
1/4 TSPS pepper
Sweet Baby Ray Honey BBQ Sauce (I imagine you can use any bbq sauce for taste preference)
1 can of Dr. Pepper

Prep work

Mix together paprika, brown sugar, pepper, and fiesta citrus. Use as a dry rub and apply all over ribs. Then place in Crockpot.

Cover with BBQ sauce (I used about half of the bottle)

Pour the can of Dr. Pepper in
Cook in Crockpot on low for about 6-7 hours. Mine was about 6.5 hours. When I tried removing the ribs from the Crockpot they wanted to just fall apart.

Now the fun part

Carefully remove the ribs and place on baking sheet.
Drain the bbq sauce from Crockpot to a pot.
Bring the sauce to a boil and reduce down to a thicker sauce, it took about 10 minutes to get it to a consistancy I liked.
Apply sauce over ribs generously, then with your oven set to broil, broil ribs until sauce gets that slightly charred looked to help capture the taste of the sauce. Reapply and repeat as needed.





Cleaning the microwave

I came across an old trick on how to easily clean your micro wave so I wanted to attempt this.


In a microwave proof glass or measuring cup add 1 cup vineger and 1 cup hot water. Place in microwave and '"cook" for 5-10 minutes. I ended up doing 10 because I forgot about it. I also added a small wooden spoon inside the liquid for safety reasons.

After the 10 minutes carefully remove the measuring cup, as it will be hot. Then you can wipe down the inside with a wet cloth. Some spots took a little more scrubbing than I had hoped for but over all not a bad way to easily and quickly clean the microwave.

Crockpot Chili


The wife and I attempted for the first time crock pot chili. We really like this recipe after we modified the original to our tastes. We do believe this is a keeper.

Here we go...

Ingredients
2 pounds ground beef. (more or less for personal taste)
1 large bell pepper
1 white onion
3 jalapeno peppers
2 15oz pinto beans (drained and rinsed)
1.5 cans of diced tomatoes (about 15oz)
1 can beef broth
1 tablespoon cumin
1 teaspoon cayenne pepper
2 big table spoons minced garlic
6oz tomato paste

Prep work
Chop half of the onion and 2 jalapeno peppers and brown with ground beef.
Chop remaining onion, jalapeno, and bell pepper. Then place all ingredients in crock pot and stir them together. Cook on low 8-9 hours or high 4-5 hours. Garnish with cheese or ketchup or just about anything. Serves about 6-8.

Notes:
We cooked ours for about 9.5 hours and did not stir once after stirring together as we were not home at all that day.

Married Life

OK we are about 7 hours into the 6th day of October. Have a birthday coming up next week. Working on the family budget.
